Sev made with Besan and Rice flours

Hello Foodies, Today our special snack item is SEV, one of the most popular tastiest and easiest snack items "Sev" from South Indian cuisine. Karappusa(Sev)is a very common South-Indian pastime snack which goes great with evening tea. You can make different variations with karappusa. There are many variations in karappusa making like sanna karappusa, spicy karappusa, non -spicy karappusa,medium-thick karappusa(jantikalu), Chakralu etc. But today I am posting the tastiest medium-thick Karappusa made with Besan and rice flour. I made it crunchy and yummy!!! I loved it too much. Here I am sharing the ingredients required and the procedure to make yummy, crispy and crunchy Sev. Have a look and try !!!


Ingredients :
Besan flour:        1 1/2 cup
Rice Flour:         1 cup
Ajwain ( Vaamu)   :          1 table spoon
Salt:           to taste
Red Chilli Powder:           1 tablespoon
Hot ghee or hot oil:           1 1/2 tablespoon
Water:          as needed to make a soft dough
Oil:          for deep frying

Procedure :
1. Take a wide bowl, add besan, rice flour, ajwain, salt, red chilli powder and finally hot ghee or hot oil and mix well.
2. Slowly add water little by little to make a soft thick dough.
3. Test the dough for salt before frying and keep aside for 10 minutes.
4. Now heat oil in a wide heavy-bottomed vessel for deep frying.
5. Take the jantikala gottam or Sev press or murukku press, fill half portion of the press with soft thick dough.
6. Once the oil is hot, reduce the flame to medium and press jantikala gottam in a circular motion to make concentric round layers of jantikala dough(Sev dough).
7. Fry for some time on medium flame till Sev turns to golden colour and crispy.
8. When the Sev turns to golden colour and crispy, then turn over to another side with the help of a slotted ladle and let it fry to a golden colour.
9. Once it is done, remove the circles and crush them into small pieces and place them on absorbent paper and allow it to cool. Repeat the same process till the dough is done.
10. Cool completely before storing in an airtight container or jar.
11. Yummy, Crispy, Tasty Sev(Karappusa) is ready !! enjoy with hot evening tea !!!!

 Kids love this snack item too much because of its crispy and crunchy nature.
